We were sent a promotional Hartley’s Lunchbox as part of the challenge with 2 Hartley’s jellies and stickers to decorate the lunch box. Hartley’s are offering customers the chance to collect 12 special edition green lids from the No Added Sugar Jelly Pots, to claim a free Hartley’s lunchbox and stickers. The sticker sheet includes Hartley’s much loved characters and alphabet to personalise the lunch box. I kept ours simple with just one character and Lucas’ lunch on it.


Lucas goes to a childminder three times a week so I am always looking for some new ideas for his lunch. These are a few I fancy trying.


Strawberry and goat cheese

Split an English muffin and lightly toast the halves. Spread each half with softened goat cheese or plain whipped cream cheese. Top with a thin layer of strawberry jam, followed by a layer of thin strawberry slices. Place the top half of the muffin over the bottom half, and press gently.


Cherry tomato and mozzarella salad

3 little gem lettuces, shredded. 1 mozzarella ball, cubed. 175g sweet cherry tomatoes, halved. 2 slices thick-sliced white bread, cubed. Dressing- 4 tbsp. olive oil, 1 tbsp. balsamic vinegar, 1 tbsp. soy sauce, 1.5 tsp caster sugar.

  1. Preheat the oven to 220C / 430F.
  2. Arrange the lettuce, Mozzarella and tomatoes in a bowl.
  3. Spread out the bread cubes on a baking sheet, season and drizzle over the oil. Roast in the oven for 10 minutes, until golden and crisp. Leave to cool, then add to the salad.
  4. Mix together the dressing ingredients, and pour over the salad before serving


Omelette whirls

½ a small carrot, ½ a small courgette, 40g cheddar cheese, 2 large eggs, 60mls whole milk (a non-dairy alternative or even water will also work if you prefer)

  • Peel and grate the carrot, then grate the courgette and cheese.
  • In a bowl or jug whisk the eggs and milk, then stir in the grated vegetables and most of the cheese – reserve a small handful of grated cheese for later.
  • Heat the oil in a large frying pan over a medium heat then pour in the mixture and tip to cover the pan.
  • Cook for approx. 5 minutes until set and golden on the bottom, then use a fish slice to flip over and cook the other side. If you struggle to flip the large omelette over you can alternatively cook the top side under a warm grill.
  • Turn off the heat then quickly spread the remaining grated cheese over the omelette evenly. The cheese should start to melt in the residual heat from the pan, so as this happens carefully roll up into a whirl, from one side of the pan to the other. (Be careful of the hot pan). The melted cheese should hold the whirl together (add a little extra if needed). If the cheese isn’t melting then you can place under a hot grill for a few seconds.
  • Remove from the pan and allow to cool. Once cool, cut the sausage shaped whirl into approx. 1.5cm slices. Turn each one onto it’s side to see the individual little whirl shapes and serve.


Stripy rolls

4 large white or brown crusty rolls, 25g melted butter, 75g Red Leicester cheese, thinly sliced, 100g wafer-thin ham, 2 firm tomatoes sliced, 100g cucumber, thinly sliced

  • With a bread knife, slice off the top of each roll to make a lid. Using clean hands, pull out most of the soft bread from the inside of each roll.
  • Lightly brush melted butter inside each roll and across the cut edge of the lids. Layer the cheese, ham, tomatoes and cucumber into the rolls, pressing down gently as you go.
  • Place the lids on top of the rolls, then wrap tightly in foil. Chill in the fridge for at least 20 mins. Unwrap and halve the rolls, then rewrap, and eat within 4hrs of making.

For Lucas’ desert, apart from fresh fruit, I stick with shop bought. There are so many organic snacks with no extra additives that he enjoys and I don’t need to worry about it being unhealthy.


His favourites are Kiddylicious  smoothie melts, 100% pure fruit whizzed up to make it all frothy, then set into delicious bubbly bites. Not quite as healthy as pure fruit but a lovely treat and also a firm favourite are Organix mini gingerbread men. Oh, and not forgetting Hartley’s no added sugar jelly.
