I had some eggs, lettuce, lemons and parmesan cheese that needed to be used up, so I created this salad for lunch. So easy but incredibly delicious and perfect now the weather is warming up. You can’t beat a refreshing salad on a hot summer day.
- Mix the lettuce and lemon zest before adding lemon juice, salt, pepper and olive oil.
- Mix it up, and add the parmesan and some red chilli flakes (if you have them in).
- Serve alone, as a side or with boiled eggs like us.
