Lemon and parmesan cheese salad

I had some eggs, lettuce, lemons and parmesan cheese that needed to be used up, so I created this salad for lunch. So easy but incredibly delicious and perfect now the weather is warming up.⁣ You can’t beat a refreshing salad on a hot summer day.

  • Mix the lettuce and lemon zest before adding lemon juice, salt, pepper and olive oil.
  • Mix it up, and add the parmesan and some red chilli flakes (if you have them in).
  • Serve alone, as a side or with boiled eggs like us. ⁣

Health benefits of lettuce

The nutritional content of lettuce varies across varieties. Almost all lettuces contain a significant amount of vitamins A and K and small amounts of vitamin C and iron. Vitamin K helps strengthen bones, and Vitamin A supports our eye health. Water makes up over 95% of raw lettuce. As a result, eating lettuce helps to hydrate the body. 

Health benefits of lemons

Lemons are high in heart-healthy vitamin C and several beneficial plant compounds that may lower cholesterol. Because lemons contain both vitamin C and citric acid, they may protect against anaemia by ensuring that you absorb as much iron as possible from your diet. Not only are lemons a very healthy fruit, but they also have a distinct, pleasant taste and smell, making them a great addition to foods and drinks.

Health benefits of parmesan cheese

Parmesan cheese is a nutritious food that provides a wide range of nutrients. It provides substantial amounts of protein, which is far higher in protein density than most other types of cheese. The protein in Parmesan is easier to digest, particularly in cheese with over two years of ageing. Parmesan offers particularly large amounts of calcium, phosphorus, and sodium. It also offers a moderate concentration of DHA and EPA omega-3 fatty acids and a reasonable supply of vitamin k2.
